Im laufenden Betrieb steht nichts still, schon gar nicht sie selbst.
The story
After the last wash, only cool air remains on the stainless steel. Fatou lifts herself onto the plate, the jacket stays open. The exhaust hood spotlight outlines the lines of her belly in bright stripes. She sits upright, her feet on a low rail, and takes a deep breath. The shirt slides off her shoulders, the skin takes on the cool tone of the light. She looks toward the camera, waiting for the first click of the shutter.
The setting
Setting: The kitchen is empty. Sheet metal cabinets in the background, a drying board full of wiped knives, nothing else. The window shows only black night and the reflection of the spotlight.
Who she is
Die Chefköchin
Fatou runs a small but outstanding kitchen in a major city. At 42 she has risen from dishwasher to head chef. She knows her body as intimately as her pots; both stay in constant use. A late shoot at the close of the evening holds only light, steel and stillness, before the next menu begins tomorrow.
Her world
Food contact surfaces must be smooth, durable, corrosion resistant, non toxic and easy to clean. Stainless steel meets these requirements and therefore shapes the image of professional kitchens.
The FDA Food Code uses the cleanability of a finely finished stainless steel surface as a benchmark for smooth food contact surfaces.
A complete cleaning follows the sequence of washing, rinsing, disinfecting and air drying. Residues cling more readily to textured surfaces than to stainless steel.
